A. nmtgirl has it mostly correct. Whether blanced, unblanched, chopped or whole, celery will lose its structure when frozen. So, as you've pointed out, it is only suitable for recipes that do not need fresh celery. It is not necessary to blanch celery before freezing. However, it will keep longer if blanched. Blanching stops the activity of enzymes that cause a deterioration of structure, taste and nutritional value. Freezing does not stop the activity of enzymes. Unblanched celery will keep for a few months w/o significant deterioration. Correctly blanched celery will keep for about a year. A. Wrap it in plastic wrap and then tin foil and store in the back of the fridge. This will keep it fresh, cold and crispy. Do the same with carrots and peeled cucumbers. Remember, when using a container it already traps air. The air that's trapped will oxidize the food faster. The idea is to keep as much air out as you can. Here! do a little test...Cut an apple and put it in a container and then a piece like I suggested and see which one ages faster.

why would you need to FREEZE CELERY?
Q. You can keep it indefinitely if you wrap it in aluminum foil...wrap it very tightly - no loose ends... So, don't waste your celery...keep it fresh in the foil. Freezing is only for soups, etc.

I just recently decided that I want to be healthier and eat more fruits/veggies instead of chips and candy etc. I currently have apples, oranges, pears, broccoli, lettuce (iceberg), leeks, green beans, asparagus (I know how to store that), celery and carrots.
